Mixed Berry Cheesecake Chocolate Pudding Pie with An Oreo Crust

A No Bake Pie

The Chocolate Goddess has to share how delighted with the wonderful, marvelous results of a recent experiment. I was in the mood for a chocolate pudding pie, but wanted a new accent on the flavor, texture and appearance. You see, I just cannot make any recipe the way it is usually presented.  I always need to tweak it, fine-tune it, adjust it or improve it.  I love change for the better ;)

I find inspiration for in many different places, whether it is a food, a pretty dish, a craving.  This time I was inspired during a trip to the supermarket by a container of Philadelphia Brand Whipped Mixed Berry Cream Cheese.  So much so, that I decided incorporate it in the  no bake cream cheese layer.  See www.kraftrecipes.com for other cream cheese flavors, I am already working on my next recipe with a different flavor. The berry taste was perfect!  The mixed berry cheesecake not only complimented the chocolate pudding layer, but the chocolate Oreo crust, as well! I topped it with a pink raspberry whipped cream tiara. Needless to say - it was more than awfully nice, it was paradise!  It’s pretty too, I love the way pink and brown flatter each other, in fashion and on the dessert plate.

Ingredients

Crust

24 whole, regular sized, Oreos

4 tablespoons Butter

Mixed Berry Cream Cheese Layer

8 ounce container Whipped Mixed Berry Cream Cheese

1 teaspoon Pure Raspberry Extract

½ cup Powdered Sugar

1 cup Original Cool Whip

1 teaspoon Unflavored Gelatin

2 tablespoons Boiling Water

Chocolate Pudding Layer

4 Large Egg Yolks

2/3 cup Granulated Sugar

¼ cup Cornstarch

½ teaspoon Salt

4 ounces Semisweet Chocolate

3 ounces Bittersweet Chocolate

2 teaspoons Pure Vanilla Extract

2 tablespoons Butter at room temperature

Stabilized Whipped Cream

1 Pint (16 ounces) Whipped Cream

2 teaspoons Pure Raspberry Extract

A couple drops Red Food Coloring

1/4 cup Powdered Sugar

2 teaspoons Unflavored Gelatin

3 tablespoons boiling water

Serves 8 - 10

Instructions

Oreo Crust

Crush Oreos in a food processor and add melted butter.

Press evenly and hard in to deep pie plate and refrigerate for 3 hours or overnight.

Berry Cream Cheese Layer

Mix gelatin with boiling water.

Beat cream cheese with extract and powdered sugar.

Mix in gelatin.

Fold in cool whip.

Pour into Oreo crust and refrigerate.

Chocolate Pudding

Chop chocolates and set aside.

Mix sugar, cornstarch and egg yolks in a medium sized pot. 

Turn on heat and gradually add milk, whisking constantly. 

Bring to a boil and reduce to a simmer for 1 minute continuing to whisk. Mixture will be thick.

Remove from heat and mix in chocolate till incorporated.

Add vanilla and butter.

Pour on top of cream cheese later and refrigerate for at least 6 hours.

Stabilized Raspberry Whipped Cream

Mix gelatin with boiling water.

Whip Cream with powdered sugar and raspberry extract till soft peaks form.

Add red food coloring a drop at a time until desired color is achieved.

Add gelatin mixture.

Ladle onto pie and smooth with recessed spatula or back of spoon.

Refrigerate until serving time.
