If charming had a flavor, it would be the buttery, cinnamon and brown sugar crumbs that top this cake. If springtime had a taste, it would be the sweet strawberries bathed in strawberry preserves nestled inside this cake.  In other words, if Mother’s Day had a perfect dessert, this strawberry crumb coffee cake would be it.

Ingredients

Cinnamon Crumb Topping

½ cup Light Brown Sugar

½ cup (1 stick) Butter melted

1 teaspoon of Cinnamon

2 dashes of Nutmeg

1 ¼ cups All Purpose Flour

Strawberry Crumb Coffee Cake

1 ¼ cups All Purpose Flour

½ teaspoon Salt

¾ teaspoon Baking Powder

½ teaspoon Baking Soda

6 tablespoons Butter at room temperature

2/3 cup Granulated Sugar

2/3 cup Sour Cream

1 Large Egg, lightly whisked

2 teaspoons Pure Vanilla Extract

1 cup, plus 2 tablespoons Strawberry Preserves or Jam

Powdered Sugar for Dusting

Baking Instructions

Cinnamon Crumb Topping

Prepare well ahead.

Melt butter and mix with granulated sugar, brown sugar, cinnamon and nutmeg.  

Add flour and mix well until it begins to clump together.

Set aside.

 Strawberry Coffee Cake

Preheat oven to 325 degrees.

Butter an 8 x 8 baking dish. 

Combine dry ingredients and set aside.

Beat butter till light and fluffy.

Combine butter with sugar.

Add sour cream, egg, vanilla and mix until completely smooth.

Add in dry ingredients and mix on low speed.

Spread in pan.

Mix preserves with spoon so they are more pliable and spread evenly over batter.

Form crumbs and sprinkle over top of cake.

Bake for 55 – 60 minutes till toothpick comes out without cake batter.  Check after 50 minutes, if cake is becoming too brown tent with aluminum foil.

Cool and dust with powdered sugar.
